Welcome to the website of Épi. We are an Award Winning microbakery specialised in making, by hand, slowdough and sourdough breads using our own natural starters and ferments and organic flours. Épi in French is the ‘ear’ of the wheat and is the name given to our signature wheatsheaf shaped bread. This bread sums up the simple special elegance of the handmade breads we make.
Fine quality, traditionally milled stone-ground flours and only natural ingredients are fashioned by hand to produce beautiful breads that satisfy all the senses. The emphasis on natural ingredients includes our own natural starter cultures and ferments such as our sea buckthorn spelt ferment used in our 'Birkdale Sourdough'. The use of gentle slow dough techniques, long fermentation, resting and proving, hand kneading, folding, fashioning and shaping techniques give our breads wonderful flavour and texture. Combine those fine natural ingredients with the touch, feel, care, creativity, patience and passion of the baker and you have our bread. Enjoy!
